Making pani puri (golgappe, puchka, whichever name you use) at home is simple, but a few small slips can spoil it. Here are six common ones and the easy fixes.
1. Filling the puris too early
A filled puri goes soft within minutes. Fill and serve one at a time.
2. Using warm water
Street-style pani should be cold. Use chilled water, or add ice cubes, so the flavour feels sharp and refreshing.
3. Not stirring the pani
Spices can settle at the bottom. Stir well before pouring each time.
4. Overfilling the puri
Too much filling leaves no space for the pani. A spoonful is plenty.
5. Skipping the balance
If your pani is very spicy, a little sweet chutney or curd in the filling helps balance it. If it’s too mild, a squeeze of lemon wakes it up.
6. Storing puris badly
Leave them open and they’ll turn stale or soft. Keep them in an airtight container and use a fresh pack for important occasions.
